Champagne cocktails on arrival

4 natural rock oysters, to share, with mignonette dressing


Entrees


½ roasted lobster with herb butter or thermidor

or

Crisp braised Kurobuta pork belly and crackling, date puree, caramelised apple, calvados and bone marrow sauce


Mains

Rangers Valley sirloin, foie gras butter, cauliflower puree, sauce of braised oxtail, roasted eschallots, Swiss brown mushroom, and tarragon

or

Crisp skinned Petuna ocean trout and caviar, champagne sauce, wilted spinach, spanner crab meat, fennel and herb salad


Sides

Salad of vine ripened trussed tomatoes, goat’s cheese, eschallots, basil and red wine dressing

or

Hand cut chips


Desserts

Amaretto and white chocolate tiramisu, with almond biscotti

Jaspers selection of Australian and imported cheese, served with quince paste, prune and fig chutney and poppy seed lavosh
